What is the best way to copy my production data to my development system?

Hi,

I want to upgrade our system from build 9230 to build 9307. In the past, my upgrade experiences have been quite painful and have provided far more practice in restoring a broken system than I really have time for.

There is no way I can take a chance on upgrading the production system until I have performed the upgrade in development. I realize that there is no direct path between the two versions and that I will have to do this in several steps which is taking this to a whole new level or terror.

Since the documentation is old and sketchy at best, I have been "winging it" to get a copy of my production data loaded into dev (unsuccessful I might add). I even managed to overwrite the current production database with a 10 hour old backup that made me very popular and I still didn't have a running development system.

What is the "correct" way to make a running copy of my production data in my development environment? We are using Microsoft SQL Server 2014. Also, once I have the data copied, how do I modify it to turn off email fetching and/or modify the email fetching settings without starting SDP?
