Weird behavior

I have email templates that are formatted and work quite well, except for the email address line.

In the template I have the following lines mixed in with all the others.

Name:	${requester.name}
Email address:	${requester.email_id}
Contact numbers:	${requester.phone}

When the email goes out however, the above looks like this:

Name:	Joe Shmo
Email address:	[$RequesterMail]useremail@domain.com
Contact numbers:	(610) 555-1212

As you can see there the the [$RequesterMail] item showing rather than just the email. I am unsure when exactly this started but it's weird.

I am currently running version 16 build 16310 but I know this was an issue in 15 build 15310, I just kind of ignored it as I figured it may have been a bug that would have been corrected, and I did not great enough notice in the prior versions.

Am I doing something incorrect?
