Sender´s Display Name

We have configured, that all Requesters get a message when a Request is opened from Sender "IT Support".

But now, when we reply to a request , the sender´s Display Name is now not "IT Support" it is "Your HelpDesk System".

 

I am really unable to find this Setting!

 

Please help.
