Just how does Service Desk discover what software is installed on a machine?

I ask because whilst implementing this software with a view to audit our installed software, we have come across lots of software that does not appear to be listed on the machine's Add/Remove Progs but is on the SD scanned list against that machine.

Google searches on some software is too vague and without getting to the software on the machine we cannot be certain of what it is?
