Purchase Orders - How do you deal with non-taxable items?

Hi,

I'm currently using, Version : 5.5.0 Build Number : 5506.

My question is having to do with Purchase Orders... Is there a way to have the option to make certain items not taxable when creating a purchase order?

Also, how do you deal with credits?
