Setup Mail Fetching alerts when more than 1

We are using Servicedesk Plus version 14750. We are looking at trying to implement something that will let us know if the mail fetching count is ever above a certain number, say 5 as an example as recently we have had some issues with certain emails not being delivered to the servicedesk from the on prem mailbox. The mail fetching is showing as running so that's not the issue, it seems to be when certain email formats are sent the mailbox gets stuck. Once we remove this email from the mailbox the mail flows as expected and are delivered to the SD.
I understand the SD won't be able to email the alert but if we could set something up with possibly an API or similar to email another mailbox when the number reaches a certain level that would be helpful
