Issues customizing Service Catalog Templates

I'm having serious issue with the customization in Service Catalog Templates, specifically regarding Field Properties (i.e. Requester Can Set, Requester Can View).

One example amongst many is that I want to set the "Request Type" as Viewable to the requester but not Settable;  However, if I only have "Requester Can View" checked, the "Request Type" does not show up in the requester's view.  Then, when I drag the "Request Type" from the left hand side so that it shows up on the template, and go back to Form Designer, "Requester Can Set" is automatically checked, when I do not want it to be.  This is highly frustrating.

Another example: I would like the set the Category and Subcategory as viewable but not settable, and only have Item be settable to the requester; however, once you make Item settable, the Category and Subcategory fields automatically match those settings and become settable as well.

A final and very similar example:  I would like to set the Group to ERP (for example) and I want this to be viewable but not settable by the requester.  I do however want to allow them to set the Technician that falls under the Group "ERP".  The problem is, by making Technician "viewable" and "settable", Group automatically becomes "viewable" and "settable" as well.

I found another issue regarding Group and Technician.  If I set the Group to ERP (for example) in the form designer and made it NOT viewable and NOT settable by the requester, but make Technician viewable and settable, the requester can choose from ANY technician.  To explain furthermore, if the Group is set to ERP, and the requester can set the Technician only, the requester should only be allowed to select an ERP technician - NOT any technician.  Please advise as this is highly frustrating and making the already-tedious customization process yet more tedious.
