Email Commands - One Additional Field Not Populating

I'm doing some testing of using email commands with additional fields. I have an incident template with a fair number of custom fields on it, and most of the fields are working fine. This includes a mix of text, date, and select fields.

However, I have one text field that just does not populate. I've triple checked the field name. I thought that perhaps it was trying to drop a leading zero (the field normally contains a 7-digit ID which will normally have a leading zero), and thus failing field validation (must be 7 characters). But I've also tested with just sending 7 alpha characters. That also did not populate.

Is there somewhere I can get an idea of what is causing this? Or some other known issue that could be to blame?
