I've seen this discussed in a few posts on the forum.

You can select multiple peer reviewers but currently it only takes one approval to progress into the next stage anyway.

If it's not already can I request a feature request to specify some approval requirements per stage? Like approval from a specific person or a minimum number of approvals?

CAB stage already gathers multiple approvals so arguably the functionality already exists within the tool.
