Can I monitor a UNIX system using commands

Can I monitor a UNIX system using commands

I am trying to monitor specific things happening in my Linux based Jasomi Peerpoint. The item I am trying to monitor is displayed when I logon to the device and issue a "show count" command. This shows me the number of registrations on the Peerpoint. How can I monitor and graph this?
