Can a requestor define category in email request?

Can a requestor define category in email request?

Since LDAP/AD autentincation is not yet available we will need to have all users submit requests via email. Is there a way to set a standard subject line which will allow the request to be defined to a specific category?

I need to make technician assignments based on category without an overall administrator making assignments and am looking for a way to do so.
